The designer adopted an architectural approach to the development of the project by conceiving the space as an oasis in a desert. The heat of the days are embodied by the southern Italian cuisine restaurant Dai Forni, which centers around wood-burning ovens and fire pillars, while the cool nightimes are embodied by the Asian fine dining restaurant Sintoho with its water towers and darker color palette.

Dai Forni

The starting point of the design process was to determine which part of Italy's culinary heritage to focus on. The designers quickly settled upon the tastes, smells and textures of the Mediterranean region, in particular the Sicily island, a historic meeting point for the Middle East and Europe.

To the left of the entrance corridor sits the front dining area, featuring a stunning twelve-meter high space with expansive views onto the city and the Persian Gulf beyond.

Kokaistudios enrobed the space in a custom designed mesh curtain illuminated by a diffused lighting system, creating a soft shimmering glow.

Three hand hammered wood-burning copper ovens produced in Australia occupy the center stage on the right of the entrance corridor.

Semi-circular banquette seating backed by Sicilian lava-stone walls offers a prime view of the chefs at work.

Both the seating and the custom-designed chandeliers take design inspiration from the traditional Sicilian woven baskets.

The two inter-connected private dining rooms are clad with walls finished in rough woven ropes. Doors and screens feature intricate patterns on carved corian that were inspirated by the local mashrabiya patterns but are in fact traditional lace patterns from Sicily.

While the restaurant is centered on the concept of fire, the bathrooms act as a refreshing counter-point featuring hand-painted blue and white Italian tiles.

By working with world renowned craftsmen from Italy to Australia and employing subtle design instruments, Kokaistudios created a project that is simultaneously rooted in the Middle East while being a true embodiment of the Mediterranean and Sicilian food culture.

The Corridor

The entrance to Dai Forni is flanked on one side by a set of fire pillars that symbolize the heat of the desert, and on the other side an expansive green wall with local desert plant varieties.

Dai Forni

The innovative green wall stretches along the length of the entrance walls and contrasts with the outdoor seating shared by the two restaurants that is centered upon a large glass sculpture symbolising water pools in an oasis.

Opposite to the other half of the green wall is a series of custom designed water towers, together creating a cooling and soothing experience and forming an entrance to the other restaurant, Sintoho.

Sintoho

Kokaistudios was invited to conceive an innovative F&B destination that could elevate the street foods from Singapore, Tokyo and Hong Kong into a fine dining experience.

The designer searched for the common theme amongest the cultures and came up with a design language less from the current nature of the individual countries but rather from the historical role that Chinese culture has played over time throughout Asia and its continuing influences.

The entrance corridor finishes in a tea wall fronted by an elaborate carved wood tea station where guests can select an expansive choice of fine teas. Water drop glass pendants produced by London-based artisans DH Liberty Lux echo the water towers, providing soft lighting.

To the right of the entrance corridor sits the main open dining area. The spatial design mirrors that of Dai Forni.

The twelve-meter ceilings offer an expansive view of the city and the Persian Gulf beyond.

The front dining area center features a series of custom designed furniture and the area is hemmed by an extensive shousugi ban burnt wood sushi counter inlaid with hand hammered brass.

The rest of the public area seating is centered largely around the individual open cooking stations where guests can experience up close the preparation of delicacies from Hong Kong.

Hand hammered metal hoods and sculpted stone bases feature images and motifs typical inspired by classical designs found in China.

The private dining rooms are an ode to Chinese embroidery craftsmanship with bespoke chairs and walls featuring hand-printed linen fabric.

The bathroom is an experience in and of itselfas the designer cooperated with a Shanghai-based video production team Flatmind to create a series of Chinese shadow video installations that are projected on the grey hand hammered Chinese stone.

The strong inter-play amongest wood, stone, and hand-finished metals is enriched by a 3D feature wall made of exposed concrete forms that runs the length of the kitchen wall.

Designed using parametric principles, its undulating form appears as a dynamic wave but is flat in reality.

Design Philosophy

Dai Forni and Sintoho are part of the emerging global cultural culinary trend of regional rather than national cuisines and the restaurant design and cuisine are a testament to this trend.

Handcrafted materials shaped and controlled up to the finest detail interact and interplay with both day and night light, revealing an incredibly expressive power.

The design of this project is a new step in Kokaistudios' method of combining a strong architectural approach to the design of interiors with an original use of materials and light to create unexpected subtle emphatic feeling between space and people.
